Good quality pots and pans made out of the right materials will ease and improve your cooking.  Having a few well chosen pots and pans will give you the flexibility to cook whatever you want and cook it better.

I have tried all kinds of pots and pans, from the old club aluminum to heavy cast iron and I have found that a good stainless steel set of pots and pans are the best on the market.  What you need to look for is good 18/10 stainless steel pots and pans with a flat bottom which gives you even heat distribution.  With even heat distribution you can equalize the temperature on your cooking surface which will result in better browning, reducing and hotter frying.

With a good set of stainless steel pots and pans, all you have to remember when browning your food is to heat the surface, add a little spray or oil before you add your meat, poultry or fish.  By heating your pans with the oil first, you will eliminate any sticking for ease in cooking and clean-up.

When choosing your set of pots and pans, you don’t necessarily need a large set.  A small good set with well chosen pieces will give you the flexibility to cook whatever you want you can always add more pieces at a later date.  A few essentials to keep in mind when choosing a set of pots and pans are, a good stock pot or Dutch oven for your soups or pasta, a large frying pan, and a couple of sauce pans with tight fitting lids.

A larger set of pots and pans will offer a chicken fryer, some cooking utensils, a small sauté pan, a casserole pan with lid and a larger sauce pan.  I would still recommend a small set to begin with.  You can add these other items to your pots and pans at a later date.

You might also want to try different material for the other items you want to add to your set of pots and pans.  I like a heavy cast iron fry pan for baking pineapple upside down cake.  I can melt the butter, add the brown sugar, pineapple, cherries and cake mix then put it in the oven.  When it is done baking, just let it cool down for about ten minutes and flip it onto a plate.  Nothing sticks to the pan and it is very easy to clean.
